Asian Mango and Chicken Salad
INGREDIENTS
Salad Dressing
1 tablespoon (15 mL) ginger root, grated
½ cup (125 mL) canola oil
¼ cup (60 mL) rice wine vinegar
½ cup (125 mL) Ocean Spray® 100% Juice Blend – Cranberry
3 tablespoons (45 mL) soy sauce
1 clove garlic, minced
salt and pepper to taste
Salad
1 pkg. coleslaw mix
1 mango, peeled, seeded, diced
1 cup (250 mL) red bell pepper, diced
2 cups (500 mL) cooked chicken, shredded
½ cup (125 mL) Ocean Spray® Craisins® Sweetened Dried Cranberries
½ cup (125 mL) chow mein noodles
Directions:
Dressing
Combine dressing ingredients in a jar and shake well.
Salad
Toss salad ingredients together in large salad bowl. Add just enough dressing to coat and toss. Garnish with chow mein noodles.
Remaining dressing can be stored in fridge for up to 2 weeks for future use.
Makes 6 servings.
