2 cups (500 mL) flour
1 cup (250 mL) sugar
1 1/2 tsp (7 mL) baking powder
1 tsp (5 mL) salt
1/2 tsp (2 mL) baking soda
3/4 cup (175 mL) orange juice
1 tbsp (15mL) grated orange peel
2 tbsp (30 mL) shortening
1 egg, well beaten
1 1/2 cups (375 mL) Ocean Spray® Fresh or Frozen Cranberries, coarsely chopped
1/2 cup (125 mL) chopped nuts
Preheat oven to 350ºF (180°C). Grease a 9 x 5-inch (23 cm x 13 cm) loaf pan.
Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.
Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely.
