Dressing: Combine the cranberry juice, Craisins®, dill, lemon juice, red onion, capers, honey, mustard, salt, pepper and garlic in a blender. Liquify until Craisins® are very finely chopped. With motor running, drizzle in oil. Use 1/2 cup (125 mL) for the salad. Refrigerate remaining dressing in a tightly closed, sterilized container for up to 2 weeks.
Trim romaine hearts and tear lettuce into bite-size pieces. Place in large bowl along with chickpeas, apples, grapes, cheese, Craisins® and walnuts; drizzle with dressing and toss gently until ingredients are well coated.
