1 1/2 lbs sweet potatoes, peeled and cut into 1/2-inch (1.25 cm) cubes
1 cup (250 mL) Ocean Spray® Fresh or Frozen Cranberries
1 large apple, peeled and cut into 1/2-inch (1.25 cm) cubes
1/4 cup (50 mL) melted butter or margarine
1/2 cup (125 mL) raisins
1/2 cup (125 mL) sugar
1 1/2 tsp (7 mL) cinnamon
1/2 tsp (2 mL) nutmeg
1/2 cup (125mL) Ocean Spray® Cranberry Cocktail
1/3 cup (75 mL) pecan halves, toasted


Preheat oven to 350ºF (180°C).

Combine sweet potatoes, cranberries, apple and raisins in a large mixing bowl. Combine butter, sugar and spices in a separate bowl. Add to sweet potato mixture, tossing to coat.

Place in a shallow 2-quart (1.89 L) casserole dish. Pour cranberry cocktail over top of casserole. Cover and bake for 50 minutes or until potatoes are almost soft, stirring occasionally. Stir in pecans and cook, uncovered, 10 more minutes or until potatoes are tender. Let casserole sit 10 minutes before serving.
