3/4 cup (175 mL) Ocean Spray® Craisins® Sweetened Dried Cranberries
2/3 cup (150 mL) crumbled Stilton or other blue cheese
1/2 cup (125 mL) chopped toasted walnuts
1 ripe pear, finely chopped
1 tbsp (15 mL) chopped fresh chives or green onion
1/2 tsp (2 mL) cracked fresh pepper
1/4 tsp (1 mL) salt
1 tsp (5 mL) each lemon juice and honey
2 tsp (10 mL) olive oil
Belgian endive leaves
1. Stir the Craisins® with the Stilton, walnuts, pear, chives, pepper and salt.
2. Whisk the lemon juice with the honey, drizzle in oil.
3. Toss dressing with the salad mixture. Serve with endive leaves, crudités and crackers. Makes 2 2/3 cups (650 mL).
