1/2 head red cabbage, shredded
1/2 red onion, thinly sliced
3 green onions, white and green parts sliced
6 tbsp (90 mL) olive oil
2 tbsp (30 mL) red wine vinegar
2 tbsp (30 mL) sugar
1 tsp (5 mL) salt
1/2 tsp (2 mL) ground black pepper
1/2 tsp (2 mL) cumin
1/4 tsp (1 mL) dry mustard
1 pkg (142 g) Craisins®Dried Cranberries
Mix together cabbage and red and green onions in large mixing bowl. Whisk oil, vinegar, sugar, salt, pepper, cumin and mustard together in a small bowl.
Pour over cabbage mixture; add Craisins® Dried Cranberries, mix thoroughly. Marinate in refrigerator for 1 hour. May be made up to 6 hours in advance. Makes 6 servings.
