6 cups (1.5 L) toasted whole wheat bread cubes, packed
2 cups (500 mL) Ocean Spray® Cranberry Cocktail
1 cup (250 mL) honey
1/2 cup (125 mL) butter
1 tsp (5 mL) cinnamon
1/2 tsp (2 mL) nutmeg
1 cup (250 mL) raisins
1 pkg (142 g) Craisins® Dried Cranberries or 1 cup (250mL) Ocean Spray® Fresh or Frozen Cranberries
whipped cream or vanilla ice cream
Preheat oven to 350°F (180°C). Grease a 2-quart (2 L) casserole dish or pudding pan. Pour bread cubes into prepared pan; set aside.
Combine all remaining ingredients, except whipped cream or vanilla ice cream, in a large saucepan. Bring to a boil over medium heat. Remove from heat and pour cranberry mixture over bread cubes. Let sit for 15 minutes. Bake pudding for 45 minutes. Serve warm with vanilla ice cream.
