Cranberry Preserve
INGREDIENTS
2 cups (500 mL) Ocean Spray® Cranberry Cocktail
1 pkg (12 oz/340 g) Ocean Spray® Fresh or Frozen Cranberries
1 1/2 cups (375 mL) raisins
1 1/2 cup (375mL) sugar
1/2 cups (125 mL) chopped dried apricots
1/2 cups (125 mL) chopped pitted prunes
2 tsp (10 mL) grated lemon rind
1 cup (250 mL) Slivered almonds
Directions:
Combine all ingredients, except almonds, in a large saucepan. Bring mixture to a boil over high heat. Reduce heat and simmer, uncovered, 15 minutes; stir occasionally. Remove from heat; stir in almonds. Cool. Cover and store in refrigerator for up to 1 month.
Serve as a condiment with meat and poultry, as a topping for ice cream, yogurt and cake or spooned onto hot biscuits and muffins. Makes about 6 cups (1.5 L).
Note: For longer storage, spoon hot Cranberry Compote into hot, sterilized jars to within 1/4 inch (6 mm) of top rim. Slide a rubber spatula down inside of jar to remove trapped air bubbles. Wipe jar rims. Place hot lids on jars and screw bands on firmly. Process in boiling water canner 5 minutes. |
