Cranberry Romaine Heart Smart Salad
INGREDIENTS
Salad
4 romaine hearts
1 cup (250 mL) canned chickpeas, drained and rinsed
2 Red Delicious apples, cored and sliced thickly
1 cup (250 mL) halved seedless green grapes
1/2 cup (125 mL) cubed Canadian Cheddar Cheese
1/3 cup (75 mL) Ocean Spray® Craisins® Sweetened Dried Cranberries
1/3 cup (75 mL) California Walnut halves, toasted
Dressing
1 cup (250 mL) Ocean Spray® 100% Juice Blend Cranberry
1/2 cup (125 mL) Ocean Spray® Craisins® Sweetened Dried Cranberries
2 tbsp (30 mL) lightly packed fresh dill
2 tbsp (30 mL) ReaLemon* Lemon Juice
1 tbsp (15 mL) chopped red onion
1 tbsp (15 mL) finely chopped capers
2 tsp (10 mL) each liquid honey and Dijon mustard
1/2 tsp (2 mL) each salt and pepper
1 clove garlic, minced
1/4 cup (60 mL) extra-virgin olive oil
Directions:
Dressing: Combine the cranberry juice, Craisins®, dill, lemon juice, red onion, capers, honey, mustard, salt, pepper and garlic in a blender. Liquify until Craisins® are very finely chopped. With motor running, drizzle in oil. Use 1/2 cup (125 mL) for the salad. Refrigerate remaining dressing in a tightly closed, sterilized container for up to 2 weeks.
Trim romaine hearts and tear lettuce into bite-size pieces. Place in large bowl along with chickpeas, apples, grapes, cheese, Craisins® and walnuts; drizzle with dressing and toss gently until ingredients are well coated.
