Palomino Chicken
INGREDIENTS
1 can (348 mL) Ocean Spray® Whole Berry Cranberry Sauce
1 plum tomato, seeded and chopped
1/4 cup (50 mL) diced dried apricots
1 1/4 tsp (6 mL) cinnamon
1 tsp (5 mL) dried cilantro
1 tsp (5 mL) hot pepper sauce
1/2 tsp (2 mL) ground ginger
1/2 tsp (2 mL) black pepper
6 4-ounce (125 g each) boneless, skinless chicken breasts
Directions:
Combine all ingredients, except chicken in a medium saucepan. Cook until heated through. Keep warm until serving time. Sauté, broil, bake or grill chicken. Top with a 1/4 cup (50 mL) of the cranberry salsa. Makes 6 servings.
