Roast Chicken and Sweet Potatoes
INGREDIENTS
1 lb (500 g) sweet potatoes, peeled and thinly sliced
4 bone-in chicken breast halves (about 2 lbs/1 kg)
1 can (348 mL) Ocean Spray® Whole Berry or Jellied Cranberry Sauce
1/4 cup (50 mL) olive or vegetable oil
1/2 tsp (2 mL) ground ginger
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) ground black pepper
Directions:
Preheat oven to 375°F (190°C).
Rinse potatoes; pat dry. Place potatoes evenly in a 13x9-inch (3.5L) baking pan. Place chicken on top. Whisk remaining ingredients together in a medium mixing bowl. Pour mixture over chicken and potatoes.
Bake, uncovered, 50 minutes or until chicken is cooked throughout and potatoes are tender. Makes 4 servings.
