Cranberry Spinach Salad with Warm Honey Dijon Bacon Dressing
INGREDIENTS
1 pkg (284 g) spinach
1/2 cup (125 mL) Craisins® Sweetened Dried Cranberries
red onion slices
Dressing
4 slices bacon, cooked crisp and crumbled
1/2 cup (125 mL) honey
1/2 cup (124 mL) lime juice
2 tbsp (30 mL) dijon mustard
Directions:
Wash and dry spinach. Divide evenly among 4 salad plates. Top each with approximately 2 tablespoons (30 mL) Craisins® Sweetened Dried Cranberries and onion slices.
Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Makes about 1 cup (250 mL).
