Spicy Cranberry Pork
1 can (348 mL) Ocean Spray® Whole Berry Cranberry Sauce
1/2 cup (125 mL) raisins
1/2 cup (125 mL) peeled, diced apple
1/4 cup + 2 tbsps (80 mL) sugar
1/4 cup + 2 tbsps (80 mL) vinegar
1/8 tsp (0.5 mL) allspice
1/8 tsp (0.5 mL) ginger
1/8 tsp (0.5 mL) cinnamon
Dash ground cloves
4 boneless pork loin chops
Preheat oven to 350ºF (180°C) *
Combine all ingredients, except pork, in a medium saucepan. Cook on medium heat, stirring occasionally, until apples are tender and sauce has thickened slightly. Keep warm until serving time.
Bake pork loin chops for 15 minutes. Top each loin with 1/4 cup (50 mL)sauce. Bake for another 10 minutes or until internal temperature reaches 160ºF (82°C) on a meat thermometer. Spoon on extra sauce before serving.
Makes 4 servings.
* TIP: Pork loin chops can also be prepared on the grill.
