Cranberry Brunch Parfait

INGREDIENTS

  • Granola:
  • 2 cups (500 mL) large flake rolled oats
  • 1 cup (250 mL) Ocean Spray® Craisins® Sweetened Dried Cranberries
  • 1/2 cup (125 mL) whole-wheat flour
  • 1/4 cup (50 mL) chopped unsalted pistachios or walnuts
  • 1/4 cup (50 mL) pure maple syrup
  • 2 tbsp (30 mL) wheat germ or flax seeds (optional)
  • 2 tbsp (30 mL) vegetable oil

  • Parfait:
  • 1 can (348 mL) Ocean Spray® Whole Berry Cranberry Sauce
  • 3 tbsp (45 mL) pure maple syrup
  • 1 1/2 tsp (7 mL) finely grated lime, lemon or orange zest
  • 3 cups (750 mL) low fat vanilla yogurt

DIRECTIONS

Granola:

Preheat the oven to 350°F (180°C). Toss the oats, Craisins, flour, pistachios, maple syrup, wheat germ (if using) and vegetable oil together until crumbly. Press mixture evenly onto a parchment paper-lined baking sheet. Bake for 25 minutes or until golden. Cool slightly and crumble. Store in an airtight container for up to 1 week.

Makes 4 1/2 cups (1.125 L).

Parfait:

Stir the cranberry sauce with the maple syrup and zest. Alternate equal layers of 3 cups (750 mL) of the granola, yogurt and cranberry sauce mixture into 8 glasses or small parfait dishes. Makes 8 servings.
