Healthy Greek Chicken Salad Lettuce Wraps

INGREDIENTS

  • ½ cup (125 mL) plain Greek yogurt
  • 2 tbsp (30 mL) milk or your choice of milk substitute
  • 3 tbsp (45 mL) lemon juice
  • 1 tbsp (15 mL) Dijon mustard
  • ½ tsp (2.5 mL) garlic powder
  • ½ tsp (2.5 mL) onion powder
  • 2 cups (500 mL) cooked chicken, shredded or diced
  • ¾ cup (175 mL) Craisins® Dried Cranberries
  • ½ cup (125 mL) sliced almonds
  • ½ cup (125 mL) celery, finely diced
  • ½ cup (125 mL) green or red bell pepper, finely diced
  • ¼ cup (60 mL) parsley, coarsely chopped
  • ¼ cup (60 mL) dill (optional), chopped
  • Salt and pepper to taste
  • 2 heads large Boston Bibb lettuce, washed and leaves separated

DIRECTIONS

In a medium bowl, whisk together yogurt, milk, lemon juice, mustard, and garlic and onion powder.

Fold in chicken, Ocean Spray® Craisins® Dried Cranberries, almonds, celery, bell pepper, parsley, dill, salt and pepper to taste.

Top each lettuce leaf with chicken salad and serve immediately.

You can also enjoy chicken salad as a salad topper or in a sandwich.
