INGREDIENTS
- Dressing:
- 6 tbsp (90 mL) Ocean Spray® 100% Juice Blend Ruby Red Grapefruit
- 1/4 cup (60 mL) mayonnaise 1 1/4 (6 mL) tsp ground cumin
- 1 small garlic clove, minced
- salt and pepper Salad:
- 8 cups (2 L) lightly packed mixed salad greens
- 1 cup (250 mL) julienned jicama
- 1 cup (250 mL) sliced red bell pepper
- 3 avocados, sliced
DIRECTIONS
DIRECTIONS
Place dressing ingredients in blender and blend until smooth.
Toss salad greens lightly with dressing and arrange on a platter.
Top with jicama, red bell pepper and avocados.
Drizzle vegetables lightly with dressing.
Reserve any remaining dressing in the refrigerator for another use.
