Broccoli and Cranberry Salad

INGREDIENTS

  • Dressing
  • 1 cup (250mL) low fat mayonnaise or salad dressing
  • 1/4 cup (50mL) sugar
  • 2 tbsp (30mL) red wine vinegar
  • 1/2 tsp (2mL) salt
  • 1/4 tsp (1mL) black pepper
  • Salad
  • 5 cups (1.25L) broccoli florets, cut into 1/2 inch (12mm) pieces
  • 1/2 cup (125mL) chopped red onion
  • 1 cup (250mL) shredded old cheddar cheese
  • 1 cup (250mL) cooked, crumbled bacon pieces
  • 1 cup (250mL) sunflower seeds
  • 1 cup (250mL) Craisins® Dried Cranberries

DIRECTIONS

Combine all salad ingredients in a large mixing bowl; mix well.

Combine dressing ingredients in a small mixing bowl.

Mix until thoroughly combined using a fork or wire whisk.

Add dressing to salad and mix well. Refrigerate 1 hour.

Makes 8 servings.
