Ingredients

1 pound (500 g) raw medium shrimp, peeled and deveined (31-40 count size). 1 cup (250mL) Ocean Spray® Diet Cran•Lemonade TM . 1/2 cup (125 mL) cucumber, chopped . 1/4 cup (50 mL) Ocean Spray® . 1/4 cup (50 mL) red onion, chopped . 2 tablespoons (30 mL) chopped fresh cilantro . 1 teaspoon (5 mL) finely chopped garlic . 3/4 teaspoon (4 mL) salt . 1 serrano or small jalapeno pepper, finely chopped

Steps

Bring a large pot of water to boiling. Add shrimp; cook 2 to 3 minutes or until shrimp are pink. Drain and rinse shrimp under cold water until cool. Drain thoroughly. In large bowl, stir together remaining ingredients. Stir in shrimp; cover and refrigerate 2 hours to allow flavours to blend. To serve, drain marinade mixture from ceviche. Divide ceviche evenly among six martini glasses. Makes 6- 2/3 cup (150 mL) servings
