Healthy Greek Chicken Salad Lettuce Wraps

Ingredients
½ cup (125 mL) plain Greek yogurt 2 tbsp (30 mL) milk or your choice of milk substitute 3 tbsp (45 mL) lemon juice 1 tbsp (15 mL) Dijon mustard ½ tsp (2.5 mL) garlic powder ½ tsp (2.5 mL) onion powder 2 cups (500 mL) cooked chicken, shredded or diced ¾ cup (175 mL) Craisins® Dried Cranberries ½ cup (125 mL) sliced almonds ½ cup (125 mL) celery, finely diced ½ cup (125 mL) green or red bell pepper, finely diced ¼ cup (60 mL) parsley, coarsely chopped ¼ cup (60 mL) dill (optional), chopped Salt and pepper to taste 2 heads large Boston Bibb lettuce, washed and leaves separated
Steps
In a medium bowl, whisk together yogurt, milk, lemon juice, mustard, and garlic and onion powder. Fold in chicken, Ocean Spray® Craisins® Dried Cranberries, almonds, celery, bell pepper, parsley, dill, salt and pepper to taste. Top each lettuce leaf with chicken salad and serve immediately. You can also enjoy chicken salad as a salad topper or in a sandwich.
