Ingredients
1 cup (250 mL) Ocean Spray® Whole Berry Cranberry Sauce . ½ cup (125 mL) Ocean Spray® Cranberry Cocktail . ¼ cup (60 mL) reduced-sodium soy sauce . 2 tbsp (30 mL) sugar . 1 tbsp (15 mL) minced fresh ginger root . 2 tsp (10 mL) chili garlic sauce . 2 garlic cloves, minced . 2 tbsp (30 mL) lime juice . 1 tbsp (15 mL) grated lime peel . 1½ cups (375 mL) shredded cooked chicken breast . 1 cup (250 mL) Craisins® Dried Cranberries . ½ cup (125 mL) shredded carrot . …“ cup (75 mL) thinly sliced green onions . ¼ cup (60 mL) minced fresh mint . ¼ cup (60 mL) minced fresh basil . 12 Bibb or Boston lettuce leaves . ½ cup (125 mL) chopped salted peanuts .
Steps
Combine the first seven ingredients in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat; stir in lime juice and peel; set aside. Combine the chicken, dried cranberries, carrot, green onions, mint and basil in a small bowl. Place about 3 tbsp (45 mL) chicken mixture on each lettuce leaf. Top with 1 tbsp (15 mL) cranberry sauce mixture and 2 tsp (10 mL) peanuts. Fold lettuce over filling. Serve with remaining sauce. Makes 1 dozen.
